Ingredients

  • 1/2 cup Egyptian short-grain rice (washed)

  • 2 cups water (for cooking rice)

  • 4 cups low-fat milk

  • 1/2 cup Sweet & Slim Stevia or Sweet & Slim Classic (250g pack, or 12 sachets)

  • 2 tablespoons cornstarch (dissolved in 1/4 cup cold milk)

  • 1 teaspoon vanilla extract or rose water

  • Optional: Cinnamon powder or raw nuts for garnish


Instructions

1. In a saucepan, bring the 2 cups of water to a boil. Add the washed rice, reduce heat to low, and simmer until the rice is very soft and has absorbed the water (about 12-15 minutes).

2. Pour in the low-fat milk and Sweet & Slim sweetener (Stevia/Classic pack or 12 sachets). Stir well and bring to a gentle simmer over medium heat.

3. Pour the dissolved cornstarch mixture slowly into the pot while stirring constantly to avoid lumps.

4. Keep stirring and let the pudding simmer over low heat for 5-8 minutes until it thickens into a rich, creamy consistency.

5. Remove from heat and stir in the vanilla extract or rose water.

6. Ladle the rice pudding into bowls. Let cool, then refrigerate for 2 hours before serving. Top with cinnamon or nuts.


Chef's Tip: Cooking the rice in water first softens it completely, ensuring the starch releases and blends with the milk for a natural creaminess.
