A warm, comforting Egyptian bread pudding. Flaky puff pastry baked with low-fat milk, nuts, coconut, and AWA Sweet & Slim, finished with a golden light cream layer.

Ingredients

  • 6 sheets of ready-baked puff pastry (or toasted croissants/flatbread)

  • 4 cups low-fat milk

  • 1/2 cup Sweet & Slim Stevia or Sweet & Slim Classic (250g pack, or 12 sachets)

  • 1/2 cup mixed raw nuts (almonds, walnuts, hazelnuts, and raisins)

  • 2 tablespoons coconut flakes

  • 1/2 cup fresh light table cream (Qashta)

  • 1 teaspoon vanilla extract


Instructions

1. Preheat your oven to 375°F (190°C) and grease a medium-sized baking dish.

2. Break the baked puff pastry sheets into bite-sized pieces and scatter them into the baking dish. Spread the nuts and coconut flakes evenly among the pieces.

3. In a saucepan, heat the milk, Sweet & Slim (Stevia/Crystal pack or 12 sachets), and vanilla extract until hot (do not let it boil). Stir to ensure the sweetener is completely dissolved.

4. Pour the hot milk over the pastry in the baking dish, and let it sit for 5 minutes to absorb the liquid.

5. Spread the light cream (Qashta) evenly over the top of the soaked pastry.

6. Bake for 15 minutes, then turn on the broiler for 2-3 minutes until the cream on top is bubbly and golden brown. Serve immediately while hot.


Chef's Tip: Ready-baked puff pastry sheets or left-over plain croissants toasted in the oven make this dessert incredibly quick and easy to whip up.
